FROM THE KITCHEN OF “PREM”ROSE EDIBLES

(“Prem” means love in the ancient Sanskrit Language)

 

I was never able to follow a recipe.  Even from the age of 9 when I began cooking, I always wanted to be a little bolder with the flavors than most recipes would suggest.

The inspiration always came in the form of a question:  what would happen if we add a bit of this or a bit more of that.  The experiences studying with the Ecole’ Chocolat Professional School for Chocolate Arts and becoming a chocolatier have defined a new level of culinary understanding and creativity.

In the ancient texts of the Ayurvedic approach to health, the love we put into our food creates the bliss and the joy in the eating. Deepak Chopra has said, “health food is food that makes us happy.”

There has been recent research on the healthful benefits of eating dark chocolate. And roses, the hips, petals, even the leaves, have been used for centuries by many people in many cultures, for garden treasures to culinary, cosmetic and healing qualities.

Our rose petal jam and honey offer an exquisite culinary experience.  They give a break from the ordinary and create a deep sense of bliss for the body and soul.

Ruby Rice Cereal

  • 2 cups cooking white Basmati Rice
  • enough milk to cover rice
  • 1/2 tsp cinnamon
  • 2 tsp rose jam
  • 1 handful raisins or dried cranberries (dried frui can be of your choice, or omit completely)
  • 1 tsp clarified butter (ghee)

Heat the milk, ghee, cinnamon, and rose jam... simmer on low until milk thickens slightly from evaporation. Add two cups of cooked rice and stir into sweetened hot milk. Serve hot.

 

Ruby goes Saffron

  • 2 cups cooked white Basmati Rice
  • enough milk to cover rice
  • 1/2 tsp saffron threads
  • 2 tsp rose jam
  • 1 handful golden raisins
  • 1 tsp clarified butter (ghee)

Melt ghee into heavy bottomed frying pan. Put in saffron and cashews. Roast slowly on low in ghee and then add the rose jam and stir. Add cooked rice to the hot saffron rose mixture and slowly roast. Pour on hot rose milk mixture from recipe above. Stir in golden raisins (presoaked in saffron and rose water).

 

Fried Bananas with Rose Jam topped with "whipped rose petal cream"

  • Four ripe but firm bananas
  • 8 cardamom pods, shelled and ground in mortar an pestal
  • 1-2 tbsp rose petal jam
  • 1 cup organic whipping cream

Melt 1 tbsp clarified butter in heavy skillet. Add freshly ground cardamom and heat in hot ghee on low for about 2-3 minutes... do not burn. Slice desired number of bananas lengthwise in four sections. Each banana will make four long thin slices.... Stir about 1/2 tsp of the rose jam into the hot cardamom butter and then lay on the banana slices. Allow them to roast in the cardamom rose ghee for a few minutes to crisp on each side and the plate and top with whipped cream - topped with rose jam warmed by thinning. Garnish with fresh tiny roses, rose petals or mint leaves as the season allows.

Could also top with a simple rose chocolate sauce, then cream + rose syrup.

Summer fruit salad with Rosie yogurt lemon dressing

  • Fresh sliced peaches
  • Blue berries
  • Bananas
  • Other fruits, preferably sweet, of your choice
  • 1 tbsp rose petal jam or simple rose syrup or rose petal honey (see recipe)
  • 1 cup yogurt - optional

 

Rose Lassi

    In blender:
  • 1 cup yogurt
  • 1/4 - 1/3 cup cold water
  • 1 tsp to taste of rose jam or rose petal honey

Blend on high until smooth and frothy. Can use ice instead of water to make extra cold.

 

Rose Milk (hot or cold)

  • 1 cup for each person being served
  • 1 tsp rose jam per cup
  • If cold whip together in blender.
  • Cardamom (1/8 tsp powder or 2 fresh ground pods)

If using cardamom, put the ground spice into the dry sauce pan over low heat and allow to slowly roast for a minute. Do not burn.

Whisk in milk and rose jam and allow the mixture to simmer over low heat for about 5 minutes. Pour into cups hot and allow to cool before serving.

Rose Petal Oatmeal

My favorite breakfast is to add a spoon of rose jam to sweeten and rose up my steel cut oats... it makes them a lovely pale pink and the hint of sweet and rose is wonderful....

 

Rose Petal Toast

Top with rose jam or the following:

 

Rose with organic almond butter

Stir 2 tsbp of rose jam into 1 cup organic almond butter. Add freshly ground cardamom that has been roasted in 1 tsbp of clarified butter. Store mixture in the refrigerator and enjoy on hot toast with Tulsi Rose Tea and Rose petal steel cut oats.
